Once you open it in your editor, what you'll see is an xml file that follows a certain format. To access it from the open menu or finder, you will have to press Command+shift+g and paste that path in. Please create a backup copy of the file before editing it!! To edit it you can use either Xcode or another editor that supports editing plist files. You will have to edit ~/Library/Preferences/ which contains the default launch services.
